PB&J Chia
It’s full of fiber and nutrients, and contains no added sugar (but you can add agave or maple syrup if you please). Just mix and refrigerate overnight! If you don’t have access to dragon fruit powder, just omit. It still makes a great breakfast chia recipe.
Ingredients
2 tablespoons chia seeds
1 cup non-dairy milk, scant*
1 teaspoon dragon fruit powder
1/4 teaspoon vanilla extract
1/2 teaspoon cinnamon
Toppings: Peanut butter (or other nut butter), your favorite fresh berries (strawberries, blueberries, blackberries, raspberries, marionberries, huckleberries, etc.), cinnamon
Instructions
In a 12-oz or larger bowl or container with a tight-fitting lid, whisk together all ingredients, except toppings. Close lid and shake to mix. Refrigerate overnight, for at least 6 hours.
When you’re ready to eat your chia, remove from the fridge and top with fresh berries, nut butter, and a sprinkle of cinnamon.
*Play around with the amount of liquid used to find the consistency of chia that you enjoy. For a firmer, more alien pudding-like dish, use less milk. For a smoother, juicier experience, use more. I like about 9/10ths a cup of milk, so I call it “1 cup, scant.”
