CILANTRO MANGO SALAD
I live in L.A., so it’s mostly summer all year-round. However, it’s currently about 70° F (which is a bit chilly, in my opinion). This mango salad makes me feel a little more connected to my other home—The Tropics. Yes…ALL of The Tropics. I like to eat it on it’s own, or put it over rice with a little soy sauce.
STUFF YOU NEED
2 ripe mangos (diced) - about 5 cups diced
1 medium red bell pepper, diced (1 ½ cups)
1 ½ cup diced red onion, diced (about ½ of a medium onion)
⅓ cup packed fresh cilantro leaves, then chopped
1 jalapeño, seeded and minced (about ¼ - ⅓ cup)
1 lime, juiced (about ¼ cup juice)
½ tsp salt
WHAT TO DO
Mix and chill.
